Ingredients
- 1 large can of pink salmon
- 1 egg, beaten
- ¼ cup cornmeal
- ¼ cup flour
- ½ cup buttermilk
- ½ tsp salt
- ⅛ tsp. pepper
- Cooking oil
Instructions
- Remove bones and skin from salmon; crumble fine.
- Mix all ingredients, stirring well.
- Shape like patties with your hands or drop by tablespoon into hot cooking oil.
- Brown on both sides.
- Drain on paper towels.

My mother in law taught me to make salmon patties using Ritz or Club crackers instead of cornmeal. My kids, adults now, have always loved them with mash potatoes and English Peas. Matter of fact it is my daughter’s favorite meal.
