Hush Puppies

Folks in the Carolinas love their hush puppies. You can find hush puppies in other states, but they’re just not the same. Carolina hush puppies are as unique as Carolina barbecue. And just as habit forming!

  • 2 cups cornmeal
  • 2 tbsp. flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 6 tbsp. chopped onion
  • 1 egg
  • 2 cups buttermilk
  1. Beat all of the ingredients together.
  2. Either shape into 2 to 3 inch "logs" (Carolina style), or for a round shape use a tablespoon, then drop into hot deep fat fryer (they will float when done).
  3. Drain on paper.
