That’s the hallmark of good, Southern cooking, and this old-fashioned recipe is a perfect example. When meatloaf is good, it’s heavenly. It’s no wonder it consistently ranks in the top ten on comfort foods lists, and the trend in recent years has been for up-scale restaurants to add this homey dish to their menus (where it sells like crazy).

The beauty of a great meat loaf is often its simplicity. That's the hallmark of good, Southern cooking, and this old-fashioned recipe is a perfect example. When meatloaf is good, it's heavenly! This recipe was pieced together with the help of Victoria Sadler Lovelace and Edie Sadler.
Ingredients
  • 2 lb ground beef
  • 2 eggs
  • 1 med onion, chopped
  • ½ bell pepper, chopped
  • 3 biscuits, crumbled
  • ¼ cup milk
  • ½ cup ketchup
  • 2 tsp Worcestershire sauce
Instructions
  1. Combine all ingredients, mixing well.
  2. Shape into a loaf.
  3. Bake at 350 for one hour.
  4. Remove and cover top with ketchup and bake for 20 more minutes.

Please note that Mama Peggy didn’t leave behind her meatloaf recipe. This recipe was pieced together with the help of Victoria Sadler Lovelace, whose mother, Edie Sadler, handed down a recipe which tastes just like Mama Peggy’s did. The best recipes are universal!

    I would love to make this using oatmeal. How much oatmeal should I use?

    My mama made a great meatloaf. Instead of biscuits, she used uncooked quick cook oatmeal. Instead of bell pepper, she used celery.

      Same recipe my mom used and she also used oats. I want to make this with oats. How much oats do I need.
