The beauty of a great meat loaf is often its simplicity, and Mama Peggy’s meatloaf was legendary. That’s the hallmark of good, Southern cooking, and this old-fashioned recipe is a perfect example. When meatloaf is good, it’s heavenly. It’s no wonder it consistently ranks in the top ten on comfort foods lists, and the trend in recent years has been for up-scale restaurants to add this homey dish to their menus (where it sells like crazy).
Old Fashioned Meatloaf

Ingredients
- 2 lb ground beef
- 2 eggs
- 1 onion medium
- ½ bell pepper
- 3 biscuits crumbled
- ¼ cup milk
- ½ cup ketchup
- 2 tsp Worcestershire sauce
Instructions
- Combine all ingredients, mixing well.
- Shape into a loaf.
- Bake at 350 for one hour.
- Remove and cover top with ketchup and bake for 20 more minutes.

I would love to make this using oatmeal. How much oatmeal should I use?

My mama made a great meatloaf. Instead of biscuits, she used uncooked quick cook oatmeal. Instead of bell pepper, she used celery.
