Ingredients:
Crust
- 1/2 cup dark brown sugar
- 1 cup butter or margarine
- 2 cups all purpose flour
- 1 teaspoon vanilla
Filling
- 4 eggs
- 3 cups brown sugar
- 2 tsp. vanilla
- 1/4 to 1/2 cup of all purpose flour
- 2 tsp. baking powder
- 1& 1/2 cups flaked coconut
- 2 cups chopped pecans
Directions:
1. Preheat oven to 350 degrees.
2. Use a pastry blender to combine the crust ingredients. Press the mixture into a greased 9 x 13in. baking pan.Bake for 10 minutes.
3. Meanwhile, beat 4 eggs well.Add other ingredients, Stir well. Then pour the filling over the baked crust and bake at 350 degrees for 45 to 60 minutes. Let cool, then cut into squares. Best with a scoop of French vanilla ice cream.
