Basic Best Salmon Loaf
A great, old-fashioned salmon loaf recipe. This basic salmon loaf is delicious with tartar sauce, or make a mushroom sauce to drizzle over the loaf.
Ingredients
- 1 can Double Q Alaskan salmon (14.75 oz)
- 2 cups soft bread crumbs
- ⅓ cup finely minced onions
- ¼ cup milk
- 2 eggs
- 2 tbsp minced parsley
- 1 tbsp lemon juice
- ¼ tsp salt
- ¼ tsp dill weed
- dash pepper
Instructions
- Drain Salmon, reserve 2 tablespoons liquid; flake. Make sure to get out all the little bones.
- Combine all ingredients.
- Place in well-greased 8 1/2 by 4 1/2 by 2 1/2 loaf pan or shape into loaf on greased baking pan.
- Bake at 350 degrees for 45 minutes.
For Salmon Patties:
- Prepare salmon mixture as above. Shape into eight 1- inch thick patties. Pan fry on both sides in 2 Tablespoons oil or butter until golden brown.
I have never made salmon loaf before but will try. Plan on using fresh smoked salmon , and can salmon. Will let you all know how it turns out.
I made this 4/13/20. Since so many things are closed during the virus, I had to adapt a couple of things in the recipe. But you can always tell a great recipe when, even with changes, it’s still terrific. And this is great! Thank you very much!! Peggy’s Restaurant would probably have been a favorite of mine if I lived near there.

Made this dish last night. While it came out tasting delicious, I’ve never heard of “soft bread crumbs” before, so I had to look up a recipe for how to make them. The recipe I found said not to pack the crumbs down, so I didn’t. Unfortunately, the crumbs were too loose to hold the loaf together, so it came out more like salmon bread casserole! Still yummy, but more details for us newby cooks would be really helpful if possible 🙂

I’m making this today for tonight’s dinner. My husband and I are taking dinner to a friend of ours who’s husband passed almost 2 years ago. She’s still having a difficult time. We visit her when we can and pray for all the time. She loves salmon, so maybe tonight’s dinner and our fellowship will help lift her spirits.
I’ll return and rate the recipe after we’ve tried it.
A real hit! Our friend was the first person to tell me how good the salmon loaf tasted. All 3 of us thought it was delicious! I will definitely make this recipe again. I might make it for Easter brunch at the church.
You left out the word dill. You have 1/4 teaspoon weed.
