The beauty of a great meat loaf is often its simplicity, and Mama Peggy’s meatloaf was a staple at Peggy’s Restaurant. That’s the hallmark of good, Southern cooking, and this old-fashioned recipe is a perfect example. When meatloaf is good, it’s heavenly.
It’s no wonder meat loaf consistently ranks in the top ten on comfort foods lists, and the trend in recent years has been for up-scale restaurants to add the homey dish to their menus (where it sells like crazy).
Ingredients
- ▢ — 2 lb ground beef
- ▢ — 2 eggs
- ▢ — 1 onion (medium)
- ▢ — ½ bell pepper
- ▢ — 3 biscuits (crumbled)
- ▢ — ¼ cup milk
- ▢ — ½ cup ketchup
- ▢ — 2 tsp Worcestershire sauce
Instructions
- ▢ — Combine all ingredients, mixing well.
- ▢ — Shape into a loaf.
- ▢ — Bake at 350 for one hour.
- ▢ — Remove and cover top with ketchup and bake for 20 more minutes.
